Paul Ellis, our executive chef
has over 15 years experience in the hotel and catering
industry, working at various renowed establishments
including the Langham Hilton, Hilton Metropole,
Langrish Restaurant, The Grange and Esseborne Manor.
Paul has also won several international awards from
the industry and comes highly recommended by Fay
Olinsky, executive chef of personal
chef uk.
Paul Ellis employs only rosette
chefs as we have a strong reputation to keep. Chefs
employed first provide a one day tasting for the executive
chef, from which few meet the challenge of our exacting
standards in food presentation, taste and texture.
All waitering staff must undergo a one day table layout
and customer service skills course.
